Nattokinase is a natural enzyme found in natto, a traditional Japanese dish made from adding spores of the good bacteria Bacillus natto to boiled or steamed soybeans and allowing the dish to ferment.
Cherished in Japan, natto is an acquired taste elsewhere, as it smells horrible and the beans are slimy from the fermentation process. The nutritional benefits are worth it though, especially because of two special nutrients: vitamin K and an enzyme created through fermentation called nattokinase.
